Sardines on a Bed of Roast Vegetables

Elaboration

Cut the aubergine, the courgette and the pepper into fine slices.

Fry the vegetables lightly in a pan until golden, using olive oil.

Place the vegetables along a serving dish and sprinkle salt and parsley over them.

Place the previously drained sardines in olive oil over the vegetables.
