The pairing of the Mytilus galloprovincialis with a shellfish sauce is one of the most traditional, when it comes to canned seafood manufacturing. At Palacio de Oriente, cannery masters since 1873, we have developed our own recipe to enhance the flavor without overpowering the delicate texture and taste of the sea that occur naturally in DOP “Mejillón de Galicia” mussels.

After spending months in the bateas ̶ or floating nursery rafts ̶ , in the Galician loughs, the DOP “Mejillón de Galicia” mussels are selected according to their size, then cleaned and steam-cooked. Once the byssus and the shells are removed, they undergo a dehydration process, which eliminates any excess water that, over time, might spoil the harmony of flavors contained in the can.
Right after opening the can, you will be able to perceive the strong aroma of the shellfish sauce, made using tomato, onion, garlic, white wine, salt and olive oil of the highest quality. Together with its careful presentation, these ingredients invite you to try the first bite.
