Thanks to the excellent quality of the water and the extraordinary properties of the phytoplankton of the Galician loughs, the DOP “Mejillón de Galicia” mussels cultivated in the traditional ‘bateas’ –or floating raft-like nurseries–, boast of an intense color and a delicate touch of the sea in their flavor.
Palacio de Oriente’s recipe for spicy pickled sauce, made using olive oil or the best vintages, high-quality vinegar, salt and a touch of chili, is the ideal sauce to surprise the palate without masking the unmistakable flavor of these mollusks.
Canned DOP “Mejillón de Galicia” mussels in spicy pickled sauce
Once the Mitylus galloprovincialis have reached the appropriate size, we begin the process of canning the product. In order to bring the best of the sea to your table, the DOP “Mejillón de Galicia” mussels are cleaned thoroughly and steam-cooked for the right time, thus maintaining their delicate texture, their tastiness and their excellent nutritional properties.
We carefully remove the shells and the byssus, so that the bivalve’s meat is kept intact. After dehydrating them to eliminate the excess water, the DOP “Mejillón de Galicia” mussels are canned and covered with our spicy pickled sauce, with which they acquire part of their intense flavor that can make them the stars of any dish.
